Sayama is one of the coolest tea-growing areas in Japan, which allows the tea trees to rest during the winter. This leads to an increase in the thickness of the leaves, leading to a full-bodied flavor which is one of the characteristics of Sayama tea.
The finishing process (secondary processing) is based on a unique fire-roasting technique known as “Sayama fire-roasting”, practiced since ancient times. The process of applying heat to the tea at the finishing stage is to dry the leaves sufficiently to improve the shelf life and heighten the aroma to improve the taste and flavor. This final process makes the tea even sweeter and richer.
Most of the teas are made from superior varieties such as Yabukita, Sayamakaori, and Fukumidori. This tea or sencha is popular for home use and has good color and taste.
