Kawagoe Potato Promote Association collaborates with the farmers in Miyoshi to make delicious sweet potatoes into shochu. The farmers only select undamaged sweet potatoes called “Benika” and mixed them with Yamada Nishiki’s yellow aspergillus to give it an elegant taste.
It is brewed with rice produced in Saitama Prefecture and Kawagoe potatoes called “Beni-Red,” grown with fallen leaves as fertilizer.
Atmospheric distillation: Bring out the goodness in the ingredients.
Due to the atmospheric distillation and unfiltered process, blue floating matter (fusel oil “aroma and flavor component”) may float on the top, which does not affect the quality of the shochu.
